Los servicios de catering para las colectividades como colegios, escuelas infantiles, empresas, residencias de ancianos y
otros centros sociales, se ven obligados a transportar la comida preparada a las instalaciones de estas instituciones.
Este transporte se puede hacer por línea fría (en refrigeración o congelación), o bien por línea caliente manteniendo
en este último caso el alimento desde su elaboración a temperaturas por encima de 65ºC (R.D. 3484/2000).
Teniendo en cuenta que el transporte de comida caliente se produce con más frecuencia, en este artículo
hablaremos de la importancia y las dificultades de mantener las temperaturas de los alimentos por encima de la
norma.
¿Por qué las temperaturas por encima de 65ºC?
65ºC es una temperatura suficiente que asegura la seguridad y salubridad de los alimentos ya que los
microorganismos no son capaces de reproducirse, ni producir intoxicaciones en ambientes con temperaturas
altas.
¿Cómo conseguir mantener las temperaturas por encima de 65ºC?
La pérdida de calor en los recipientes utilizados por empresas de catering, es el principal factor a tener en cuenta
para asegurar que los alimentos se mantienen a temperaturas altas.

I know it's just days after Valentine's Day and this could essentially be a Valentine's Day DIY, But
